The restaurant’s name evokes two key concepts rooted in local culture: “jauja” meaning abundance and “jíbaro” being a quintessential icon of Puerto Rican folklore – the humble country peasant who lives off the earth and its bounty. And it’s with a similar mindset that customers flock to the restaurant during lunchtime to enjoy some of Chef Annexy’s singular cooking with friends and family.

At Jauja, dishes considered commonplace throughout the island are reshaped into modern meals while maintaining their ‘jíbaro’ essence. The Caviar Jíbaro, a blood sausage mousse served with golden crisp tostones, is a prime example of this transformation. Another true Puerto Rican classic, Chuletas Kan Kan or porkchops, have become Jauja’s signature dish.

House drinks include the Guava Passion Martini – an invigorating blend of vodka and Grand Marnier enhanced by the tropical flavors of these fruits.
